Dove In The Instant Pot

This is my mother in law’s recipe and a family favorite. We serve it with polenta but is good with potatoes or rice too.

Dove and Gravy in the Instant Pot.

Ingredients:
About a dozen doves (we use breast meat only with bone) cleaned and patted dry.
3 tablespoons cooking oil.
One cup flour.
Salt and pepper.
One and a half cups chicken broth.
One chicken bouillon Cube.
One half cup water.
One half chopped onion.
One tablespoon minced garlic.

To make gravy you’ll need about a tablespoon of cornstarch and a half a cup of cold water.

Clean doves and pat dry. Pour flour in a shallow bowl and add salt, pepper, and one crushed chicken bouillon Cube. I don’t measure the salt and pepper but it probably is about a teaspoon of salt and one and a half teaspoons pepper. But season to your taste.

Set your instant pot to saute and add about 3 tablespoons of cooking oil. (I use canola). Add onions and garlic. Roll your Doves in the flour mixture and place them in your heated instant pot. Brown them just as you would on the stove. Be sure to stir well and scrape any flour off the bottom of the instant pot. Once the doves are browned add one and a half cups chicken broth and 1/2 cup water. When you use the instant pot you don’t need as much liquid as you normally would use on the stove but since we want to make gravy, we like to have about a cup and a half to two cups of liquid.

Place the lid on the instant pot and lock it. Now reset your setting to manual and the timer to 40 minutes. Most recipes will tell you you can cook poultry in about 15 to 20 minutes in the instant pot but I always cook it longer and the doves come out so tender this way. The meat literally falls off the bone but you can use your judgement here. After your instant pot has completed its cooking cycle allow it to decompress on its own. Now remove the lid and prepare your gravy. we simply add our thickening agent right to the recipe in the instant pot and it works fine but if you want to you can pour your doves through a strainer and put the meat to the side. Just be sure to pour your gravy mixture back into the pot to thicken it. As I said, we don’t do this. We leave the doves right there in the instant pot and thicken it all together and it works just fine for us. We use cornstarch and water. Add 1 tbsp of cornstarch to a half a cup of cold water and stir until cornstarch dissolves. Now add this paste to your instant pot and this will thicken your gravy. You can use flour if you like but we prefer cornstarch.

That’s it! Adjust as you like and enjoy. you can serve this over mashed potatoes or polenta. We always serve ours with polenta and it is so good. We just use the instant polenta right from the box and that works very well.
